Frugal Recipe Series: Nikki’s Spicy Chicken Salad

Nikki’s Spicy Chicken Salad

Yes! My name is Nikki.

I like to use the spring mix salad packs and I also use Romaine lettuce, Spinach, and leaf lettuce in my salads. Mix in shredded carrots and shredded purple cabbage.

I use leftover chicken, cut off slices of chicken and cut it up in pieces.

I add black pepper, and Tabasco sauce. I like to warm it up in the microwave, or in the cooking pan with a teaspoon of extra virgin olive oil.

Put the chicken in the salad and mix up.

Optional: Salad dressing. Do use the serving size or less than the amount on the bottle. Another idea is put some salad dressing on a small plate and dip your salad in the dressing. Try to avoid drowning your salad in the dressing. It loses its nutrition value faster than a speeding car asking for a ticket.

Optional: Add grounded up flaxseed to your salad. It has a nutty taste to it.
